Had a Canadian coworker ask me if the phrase "good deal" is a Midwest thing. Is there any regionality to that phrase in the US? I wasn't sure how to answer

Flavor and consistency at the bottom are great. However, there appears to be a layer of fat/butter(?) that rose to the top that shouldn't be there. I wasn't paying enough attention at the beginning and just assumed some butter that had formed in the cream while in the container would mix back in.

This came pre brined, so I rinsed it off and patted dry before re-tying the pieces together with some string.
Rubbed the resulting turkey log with a really thin coat of mayo to help hold the seasoning. Used this dry rub + extra black pepper:
