Maybe more accurate to say that we *preserved* the culture of sticking to self-chosen names and avatars, which used to be the norm on the old pre-social media internet. It was specifically Facebook that first got everyone comfortable with sharing their real names and faces online.

You should basically treat any messenger you use as plaintext (probably even Signal). Obviously the implications of this suck massively. I can’t give you good advice regarding dealing with those.

Discord does this too for a start. pretty much any service is going to do this unless they’ve deliberately engineered themselves to be E2E in a way that minimizes what they can turn over (signal for ex)
