The IP address is not the most critical privacy data point they're collecting. They've already got your name, your friends, where you live, work, what youre sleeping habits are, your political affilation, gender, age, hobbies. What extra value does the connecting IP address have?

hate to burst everyones bubble but VPNs are largely a scam—another way for companies to harvest and sell your data. They're not worthless but protections are marginal. At the very least, DONT PAY FOR A VPN! If you really need privacy, use an encrypted browser like Tor

Using DNS-over-TLS for authoritative DNS is bleeding edge and not widely supported yet. Cloudflare and most ISPs don't support this yet. Vast majority of the DNS-over-TLS connections are coming from Google Public DNS. There are only a small number of connections from elsewhere.

For every ten people who come up to me during conferences etc. to tell me Qubes UX improvements are great, there is one loud dudebro (of any gender, it's the dudebro energy that counts) that insists on telling me UX never matters for security-focused stuff.

Security" is not a thing that is either there or not. It's not binary. It's a spectrum, and there are different threat models that have different countermeasures. Not all countermeasures work for every threat.
