I've written out my 'what I think happened' piece and put it behind a graphic media tag so as not to spoiler-blast people

SPOILERS ABOUT UNBEATABLE'S ENDING DON'T CLICK IF YOU DON'T WANNA SEE
my take about what was supposed to have happened is that the flashbacks with the different art style take place in the real world, and Beat(rice) spends the entire game in a coma after being hit by a car. the game takes place between her being hit and her waking up, functionally coping and processing inside her head, with the characters representing different facets of herself as she struggles to come to grips with her mother's death and how poorly she treated her. it explains why she vanishes at the end, why the flashbacks have a different art style, why the game's final moment is her waking up and hugging her sister, why the world and characters reflect her obsessions and fears (everyone has music names in the fantasy but not in the real world, the silence as a nothing where something should be, 'you are 99% emptiness', etc) it all thematically locks together very cleanly I just don't think the final beat being 'all these characters you've spent the game's runtime coming to love are not real, while these characters you barely know (but Beat does) *are*' really works

I had a dead Universal Media Disc (left, 2004) and a dead Minidisc (right, 1992), so I pulled both of them out of their plastic shells to get a closer look (CD at the top for reference)
Three optical discs on a black table, refracting a bright white light into rainbows. At the top is a CD, the largest in the image by a mile, with a shiny silver optical layer. Bottom left is a Sony UMD (Universal Media Disc), less than half the size of the CD. It has a metal hub at the center, instead of a hole like the CD, and its optical layer is a bright silver similar to the CD. Bottom right is a Sony Minidisc. It's slightly larger than the UMD. It has a metal hub very similar to the one in the UMD, and its optical layer is much darker, nearly black.
