Definitely good progress here. I would also pull it off based on feel, not temperature. Brisket is just more variable than other cuts like pork butt.

Yes, got an old cheap used two tuner model on ebay. Just make sure not to get the cablecard one. It spits out a playlist at hdhomerun.local/lineup.m3u. It doesn't have an EPG so I use M3U4U.com to generate the EPG
