You could toast the bread. I guess you could try using baking soda/powder to get a bit of a rise, although the bread would be fairly dense.
Skip the avocado and go straight to guacamole - it spreads more easily & has some extra flavor and bite to it.
Eggs though - alternatives aren't great.
