Another chilly Vermont night classic: fresh, warm cider donuts! These are baked and then brushed with melted butter and tossed in crunchy cinnamon sugar. SO GOOD. 🍎

Earlier this month our wonderful cat Fergus passed away, so in our grief and stress we let things slip a bit and I found myself one night with no groceries to cook with except tofu and cabbage. 😩 I felt pretty hopeless in that moment but ended up finding this recipe that was surprisingly good!

Another cold, rainy, fall day here so in the morning I thought “ohhhhh chili and cornbread!” So then I was looking forward to it ALL DAY which just made it more delicious. 😋

Yesterday was very typical late October Vermont weather - super cold and rainy day that chills you to the bone. It was the perfect night for a classic, smoky pea soup and biscuits!

This is going into our fall dessert rotation. It’s another hit from Cooks and it’s like a thin apple crisp on a shortbread base. We had it with breyer’s oat milk ice cream. Incredible!

My boyfriend’s birthday cake this week! Chocolate with peanut butter buttercream, semisweet ganache, Breyer’s oat milk ice cream, and a vegan version of Reece’s pieces sprinkled around.

Gochujang tofu sandwich with quick pickled sesame carrot and cucumber. And oven fries. I like cold noodles but I’m a bit sick of them so I HAD to turn on the oven tonight even though it was probably too hot for it!

My parents gave us some beautiful ripe tomatoes from their garden and I didn’t want to obscure their incredible flavor, so I just roughly chopped them and cooked very briefly with some garlic, S&P, mushrooms, butter beans, and a touch of dry herbs. Simple and perfect. 🍅

Korean jackfruit tacos with sesame coleslaw. This was adapted from the Korean jackfruit sandwiches in Nisha Vora’s cookbook Big Vegan Flavor, but I had like five open corn tortilla packages I needed to use up sooooo 🤷🏻‍♀️

So often I see people declare that veganism is “expensive” and only for rich people. I don’t argue with anyone but privately I don’t get it. I’m far from rich and most of the meals I make are like $2 per serving. 🤷🏻‍♀️ Tonight we had this cheap, easy, quick, spicy pasta salad.

And then next next I did my favorite leftover meal: day-after-tacos fried rice. I just pan fry fresh corn, broccoli, cabbage, peas, whatever other veggies I want with the leftover rice and salsa + spices and top with the leftover beans!

This is one of our favorite summer dishes, Korean cold spicy noodles called bibim guksu. Noodles and whatever veg and protein you like tossed with a sweet, savory, very powerfully spicy sauce. 🥵 If you are sensitive to heat take it very easy with this sauce!

I was in the hospital having an immunosuppressant infusion today (normal lupus thing for me, not a big deal) and it was hot again tonight, so I needed something super easy for dinner. Is it a showstopper? No, but it was good and easy!

My boyfriend loves sweet apples, but often we get ones that turn out to be punky so he won’t eat them. One of my favorite ways to use up the reject apples is shredding them into a bulgogi sauce. It’s not quite the same as using the Asian pear that most recipes call for but it works!

Crispy tofu sandwich by Nisha Vora with oven potato wedges. Would the tofu be better if it was marinated and not pan fried with spices? I guess, but it’s in a sandwich with pesto and bright spicy coleslaw so I don’t think you’d really pick up on the difference.

Last night we had wraps of a bright, smoky, spicy chipotle lime corn and bean salad and chili garlic couscous. I took the photo before I wrapped because I knew I wasn’t going to be able to bundle it beautifully and give you an aesthetically pleasing cross section shot. 😂
