Unglamorous photos of our unglamorous vegan dinners and treats! Not claiming to represent of all vegans. Any negativity, rudeness, carb-scolding, language-policing, and misinformation will be blocked but polite good faith questions are welcome! 🌱

Another chilly Vermont night classic: fresh, warm cider donuts! These are baked and then brushed with melted butter and tossed in crunchy cinnamon sugar. SO GOOD. 🍎

Great thread of vegan recipe websites - most of them focused on being CHEAP and EASY!
We love to encourage people to reduce the meat and dairy in their diets, but understand that it can be hard to know where to start, and unfortunately many people are put off by the perceived cost. If you want to try adding more plant-based meals to your life, are some resources to get started! 🧵

Earlier this month our wonderful cat Fergus passed away, so in our grief and stress we let things slip a bit and I found myself one night with no groceries to cook with except tofu and cabbage. 😩 I felt pretty hopeless in that moment but ended up finding this recipe that was surprisingly good!

Another cold, rainy, fall day here so in the morning I thought “ohhhhh chili and cornbread!” So then I was looking forward to it ALL DAY which just made it more delicious. 😋

On #DiadelosMuertos the UFW wants to honor the martyrs of La Causa who gave us the most precious gift they possessed — their very lives. Nan, Nagi, Juan, Rufino, and René are very special human beings. We will never let the sacrifice they made for us be forgotten.

Today is World Vegan Day! If you are concerned about climate change, reducing meat and dairy in your diet is one of the most powerful individual actions you can take.

Dr. Goodall went plant-based after confronting what that meat represents: pain. Since, she learned more reasons why the work to #eatmeatless is important.

Yesterday was very typical late October Vermont weather - super cold and rainy day that chills you to the bone. It was the perfect night for a classic, smoky pea soup and biscuits!

This is going into our fall dessert rotation. It’s another hit from Cooks and it’s like a thin apple crisp on a shortbread base. We had it with breyer’s oat milk ice cream. Incredible!

My boyfriend’s birthday cake this week! Chocolate with peanut butter buttercream, semisweet ganache, Breyer’s oat milk ice cream, and a vegan version of Reece’s pieces sprinkled around.

Gochujang tofu sandwich with quick pickled sesame carrot and cucumber. And oven fries. I like cold noodles but I’m a bit sick of them so I HAD to turn on the oven tonight even though it was probably too hot for it!

Personally I’m not comfortable referring to vegan food as “cruelty free”. Yes, we’re doing what we can to minimize harm to animals but we can talk about that without using terms that erase other cruelties throughout the food system. 💔
“Over and over again, we have seen farmworkers go without the heat safety protections they are legally entitled to,” said Teresa Romero, president of the United Farm Workers union. The state’s heat illness prevention enforcement system “isn’t working.”

My parents gave us some beautiful ripe tomatoes from their garden and I didn’t want to obscure their incredible flavor, so I just roughly chopped them and cooked very briefly with some garlic, S&P, mushrooms, butter beans, and a touch of dry herbs. Simple and perfect. 🍅

Korean jackfruit tacos with sesame coleslaw. This was adapted from the Korean jackfruit sandwiches in Nisha Vora’s cookbook Big Vegan Flavor, but I had like five open corn tortilla packages I needed to use up sooooo 🤷🏻‍♀️

So often I see people declare that veganism is “expensive” and only for rich people. I don’t argue with anyone but privately I don’t get it. I’m far from rich and most of the meals I make are like $2 per serving. 🤷🏻‍♀️ Tonight we had this cheap, easy, quick, spicy pasta salad.

The other night we had our favorite tacos and red beans and rice.

Basil butter beans with crunchy garlic crostini to scoop it up. So glad it’s finally cool enough to simmer things and turn on the oven!

😆 These photos are terrible (more terrible than usual), but this is a really good bean burrito filling, I swear.

My parents brought us some beautiful fresh basil from their garden yesterday so I made this bright, easy, summery lemon basil tofu for dinner. 🍋 🌿

This is one of our favorite summer dishes, Korean cold spicy noodles called bibim guksu. Noodles and whatever veg and protein you like tossed with a sweet, savory, very powerfully spicy sauce. 🥵 If you are sensitive to heat take it very easy with this sauce!

I’ve been enjoying and posting a lot of nice, cold salads this summer and they’re only possible because of incredibly hardworking and underpaid agricultural workers. If you aren’t already, please consider following and supporting @ufw.bsky.social! 🥗
Roma tomato harvesters at work. The bins are stacked 3 high to protect this delicate produce during transport. This means more climbing & risk for the worker. Romas are smaller & harder to pick so it takes more time to fill each bucket. They earn 89 cents per bucket. #WeFeedYou

I was in the hospital having an immunosuppressant infusion today (normal lupus thing for me, not a big deal) and it was hot again tonight, so I needed something super easy for dinner. Is it a showstopper? No, but it was good and easy!
