I want to say that people do use cables for those since the pieces are so large. The length of the cable and the size of the needles will depend on the specific project (often the pattern will give information on that)

It's easier to start with thicker yarn/needles at the beginning, so I would pick out a yarn that's at least worsted if not thicker, then check the label for recommended needle size (right near where it says hook size). It should likely say diameter in mm and its size according to your country.

You don't need to worry about cables and all that for now - that's for very wide projects or for working in the round. You'll likely start with what they call straight or single point needles - they'll have a point on one end and a wider piece at the other to keep your knitting from sliding off.
