I'm rereading Patrick Leigh Fermor's 'A Time of Gifts,' the first volume of his travels from the Hook of Holland to Constantinople in the years before WWII. Last night I stumbled upon this passage about the birth of the croissant at the end of the Last Crusade, in the 17th century.

I created a copycat recipe of Sofra's beloved crick-cracks using sourdough discard in place of buttermilk, for my book, and they were given the official seal-of-approval from the bakery's founders.

I watched a guy climb and hand-trim a 40-foot tall royal palm today, it was fucking cool. I took video, which I will share when I'm no longer on vacation.
