You probably already know this, but to delete Edge, use an uninstaller like Wise Program Uninstaller, then go to "C:\Program Files (x86)\Microsoft" and delete the folders Edge, Edge Core, and EdgeUpdate. Leave the other folders as-is. Should be good until next Windows Update.

At some point MS had created a new, separate 'edgeupdate2' service, which I suspect is the culprit as none out of MS store, Windows update and the original 'edgeupdate' were set to update without intervention.
