Fat and lean clay is engineering terminology for high vs. low plasticity, so generally related to kaolinite + illite vs. smectite (or at least expandable 2:1) mineralogy.

Never used the terms lean vs fat so I’m not sure. Typically prefer a kaolinite or a mixed kaolinite-illite with as little crystalline silica as possible. Ca-bentonite can be great for plasticity but Na-bentonite tend to not fire to stoneware temps. Grain size and flocc size matter a lot too
