Okay so back by where I'm from, in New Orleans, "beignets" are a term for a particular kind of pillowy fried dough. But in Montreal a "beignet" is just a doughnut. So just now I found a place in Montreal selling New Orleans style beignets and I am now SO curious if they can pull it off
