My first meal in Marrakech was an amazing vegetarian tagine with green peas, tomatoes, eggs, and more.

It was complemented by fresh dates, bread, and closed out with a fudgey cake served with a dollop of whipped cream.

We lucked into some turkey legs on the grocery discount app so we decided to make a little Thanksgiving dinner and watch Superman. 🍽️ Pan-seared turkey finished in the oven, braised sweet potatoes, roasted broccoli, and dressing with a little red wine and cider pan sauce.

Finally made the pasta and it was ridiculously good. I sautéed 4c of diced yellow squash, half diced onion, 2 garlic cloves until it started to brown. Blended it w/1/3 block cream cheese, 1/2c milk, 1/2c cheddar & 3 tbsp parmesan. Blended it together. Topped w/garlic parm breadcrumbs. 😍🍽️😊

Calabrian chili Lumache with Jimmy Nardello, pepperoncini, pecorino, and parsley.

Based on the maccheroni alla mugnaia at Le virtu. I figured the preparation was somewhere between aglio e olio and cacio e pepe, so that's what I did. I think I got pretty damn close.

Slice the pork into medallions. Put down the Polenta, fan the pork on the polenta, the spoom the remaining blueberry sauce on the pork. Add the Broccoli. Give everything a sprinkle of Maldon Salt and enjoy! 🍽️

Grate 2 cloves of garlic then mix with a pinch of salt pepper and EVOO. Pull the pork off the grill and allow to rest when the time is up. When the broccoli is done add a splash of water and cook until evaporated then allow the broccoli to sear again. Toss with the garlic and EVOO mixture. 🍽️

split broccoli. Roast the tenderloins on the hot side of the grill then move to the indirect side. Brush half of the blueberry balsamic glaze on the pork then cover for 15 to 20 minutes. Heat a pan with EVOO on 6 then add the broccoli split side down salt and cover about 3 minutes. 🍽️

EVOO salt and pepper on the tenderloins. 1C blueberries sprig of rosemary 2T balsamic vinegar and 1/2C real maple syrup. Reduce til syrupy. 1C cornmeal to 4C hot chicken stock.Whisk the cornmeal in and keep whisking 20 minutes.Take off heat and finish with 1/4C parm and some cream. S/P to taste 🍽️
