I haven't tried it with the optional ingredients (cardamom, turbinado sugar, flaky salt). In my version, coconut oil is my neutral oil. I also add 2 teaspoons of chia seeds to the batter and 1 teaspoon to top the loaf. The seeds on top give it a little crunch :3

makes one eight inch loaf prep ten minutes cook time one hour total time one hour ten minutes
In a world where everything is the best I try saving my hyberboles for when I truly mean them. In this case, while it's a bold statement, I stand by it: This is the best banana bread I've ever had. It's one of the desserts I crave most often; I've made it so many times I could do it blindfolded. This recipe creates a banana bread that is moist, melt-in-your-mouth tender, perfectly sweet, and aromatic. I tried pairing it with glazes, frosting, even butter. Turns out it doesn't need any of them. It's just that good on its own!

Ingredients
Neutral oil for the loaf pan
3 medium or 530g soft ripe spotty bananas see note
3/4 cup packed or 150g light or dark brown sugar
2 large eggs
1/2 cup or 113g neutral oil such as sunflower or grapeseed
1 tablespoon or 14g vanilla extract
1.5 teaspoons or 7g distilled white vinegar
1/2 teaspoon or 2g kosher salt
1/2 teaspoon or 1g ground cinnamon
1/4 teaspoon or .5g ground green cardamom optional
1.5 cups or 187g all purpose flour
1/2 teaspoon or 3g baking soda
1/2 teaspoon or 2g baking powder
2 tablespoons or 30g turbinado sugar optional
flaky salt optional see note
Instructions
Place an oven rack in the center of the oven. Preheat the oven to 350°F.
Grease an 8 × 4-inch loaf pan with about 1 tablespoon neutral oil and line with parchment paper, letting any excess paper drape over the sides. Peel the bananas. In a medium bowl, use a fork or a masher to mash the bananas until smooth. You should be left with about 1½ cups (400g) mashed bananas. Add the brown sugar, eggs, oil, vanilla, vinegar, salt, cinnamon, and cardamom (if using), and use a fork or whisk to combine.
Pile the flour, baking soda, and baking powder in a small mound on top of the wet ingredient mixture. Use a fork or whisk to gently combine just the dry ingredients by themselves. Then mix to fully incorporate into the batter, checking for any dry spo…
