My Gathering of Friends meals have been about different friends sharing company over fantastic food and wine. It was a great excuse to practice (and do lots of dishes).

This year the auction winner welcomed me to the table in that vein to enjoy with them.

Started this bread yesterday with an overnight preferment for maximum flavor, it's become my go-to sandwich bread:

King Arthur Baking's multigrain sandwich bread, flaxseed gives it extra nutrition and flavor.

The horrors continue outside every day. Don't think I'm not paying attention to what's occurring, I have a degree in history and recognize the truth.

I'm just trying to share the cooking I enjoy, it's difficult to continue normally:

When I made ramen yesterday, I made the optional chashu, or braised, marinated, rolled pork belly. It sits overnight in the braising liquid for maximum flavor.

It was worth the wait and elevated these leftovers.

Preparing in professional kitchens utilizes obscene amounts of product. What looked to be a gratuitous amount of mushrooms quickly evaporated with the water contained within.

Sometimes all you need is a simple breakfast:

Over medium fried eggs with homemade, buttered multigrain bread. If avian flu were not such a prevalent threat I would eat these over easy.

❌ Chicken and dumplings.
✅ Mushroom and dumplings.

This recipe develops great flavor from really browning the mushrooms in butter. Wisconsin butter, of course, makes it better:

On days like today, I'm reminded that -40 degrees is the same in C and F.

To warm myself for breakfast, Korean-inspired heat:

In the depths of winter is when I most appreciate my canned jams from the summer. Nothing like strawberry jam to remind one that it won't always be a winter hellscape:

Peanut butter and homemade strawberry-rhubarb jam on homemade multigrain bread.

Frigid outside? Warm the house by baking sourdough bread.

Not overly satisfied with this loaf-might have been a bit too cold, the levain not lively enough; smells great. Great learning opportunity though

100% whole wheat sourdough bread from The Perfect Loaf.

Some of the earliest European settlers to WI in the 1820s were from Cornwall, drawn by the need for miners. Their habit of digging into hills helped provide the Badger State with its nickname.

I celebrated their heritage by making pasties from scratch.

Easy with sandwiches: any one in which I made the bread.
1. Turkey and avocado on homemade flaxseed bread.
2. BLT on homemade sourdough, fried in bacon fat.
3. Korean fried chicken sandwich on pretzel bun.
4. Turkey and pickled apples with sharp cheddar on homemade wheat bread.
