Including stems to raise pH. Not something most California winemakers want to do
Grenache Gris 22.7 Brix, 3.21 pH and TA of 7.8 g/l. You don’t drink numbers mais quand même.
Finally got the analyses of the grapes we brought in today. Not the prettiest grapes I’ve ever seen but numbers were perfect. Grenache 23.1 Brix; 3.17 pH(!!!!!). TA 7.8 g/l. The pH is quite low but presence of stems should counter balance nicely.
Hangin’ round the press pan. Haven’t yet taken a pH measurement but this Grenache Gris will appeal to the acid apHicianado.
Forgot to mention; we’re leaving the stems on the bunches and gently foot treading with minimal crushing.

5.5 tons of Grenache Gris (with some homeopathic additions of Grenache Blanc) going into the press momentarily. Normally we would co-press with the Blanc but it’s dragging its feet Brixwise.

I’m attempting to will sugar accumulation into the Grenache Blanc grapes with limited success. Some rain is likely in the next few days and that won’t help matters at all. Definitely approaching a Help, Mr. Wizard moment.
Picked the special Grenache grapes yesterday for air drying and will crush on Thursday. Planning to pick the Grenache Gris and Blanc as well if we can.
