I'm not a huge dessert guy so I don't have a huge list of pies I have eaten but I'd go
1. Banana Cream (specifically the Emeril recipe)
2. Key Lime
3. Pecan (if not nuclear sweet, again, the best one I've had was at Delmonico)
4. Pumpkin

The king of pies is the banana cream pie from Delmonico in Las Vegas, the only place I go out of my way to have dessert. I trust the pastry chef there with my life.
