independent hotbars (specifically hotbars 1-3 in the settings) that change with the class you have equipped.

I personally keep a hotbar off to the side with stuff like crafting and gathering logs and other important non-class stuff. I'm not quite sure what you mean by switch hotbars, but you should be able to enable additional ones in the hud layout menu in system settings. Each class has 3 (1/2)

For mining and botanist nodes, you have to be their specific classes in order to see them, in addition to being the proper level for the node (iirc you get a new set you can find every 5 levels) For alchemist, you can buy low level (I think up to level 15 or 20) materials at the alchemist guild shop
