I did it! Outside looks good, wont know about the inside till the morning. The lift on the hat could be a lot better. Im doing it again tomorrow :)

There's a lot to the technique I need to do better, but I think I get it. Tomorrow, stiff levain instead of doing my own thing, and also a overnight cold ferment.

The first ones I made, just inactive discard from feedings, salt and butter. Those were...an acquired taste lol decent for hummus

These I made with active discard, butter, salt and bread flour, to cut the tartness, was about 70/30 discard to flour ratio spread on parchment at 325 for like 40min.
Yesssss. The spoils of war. Added a little more flour to themso they got a bit of chew. Brushed with olive oil, and added Trader Joe's Aglio Olio seasoning, sprinkled parmesan right out of the oven...heaven....
Croissant Sourdough loaf and Sourdough Focaccia w/out active yeast, now bulk fermenting. And some Italian cracker/bread stick discard in the oven.

Last weeks second loaf came out great for a 100% hydration dough

Its a tad dense/heavier than I wanted it to be. But Its the only way I could be any happier. it tastes perfect, good crunch on the spoils of war. nutella and mascarpone :D

Autolyse method with 100% hydration starter, 6 hour bulk fermentation. 4 folds, 15hour cold fermentation, 20min lid on dutchoven @ 500, lid off for another 20-25min, cooled for an hour before cutting.
