To me em dashes convey urgency—your sentence is tripping over itself to get out—there’s no time for deliberative punctuation!
Commas, those are slower. They mosey, they take their time, they list.
Parentheticals would be whispered asides, or footnotes in print (barely worth mentioning, really).
