Cheesy and vegan! My favorite splurge breakfast. Cut cold baked potato into chunks & toss in olive oil. Sprinkle with Mrs Dash and pepper. Cook in oven at 450 for 10 mins. Add chopped onion & return to oven for another 5 mins. Cover with Daiya shreds. Return to oven until melted.

Just made the perfect vegan "cheese" bagel. Daiya cheese toasts beautifully. Just get a vegan bagel, put a little plant based spread on each half, red pepper flakes, and Daiya cheese. Fifteen minutes in the oven at 375. Small things to us but big changes for cows and their babies.

Yum! Vegan spice cake made with applesauce instead of eggs. Use 1/4 cup applesauce for each egg. I also added in some chopped walnuts. After it cools I plan to dust it with powdered sugar and shredded coconut. Got to say applesauce did great - better even than packaged egg substitutes.

Quick, easy and vegan. Used Beyond Beef and Daiya to make tacos. 15 minutes. No cows harmed.
