Any attorney who uses "everything could be AI" as an argument will also weaken their own photo/video evidence. And opposing counsel could always subpoena the person who took the photo/video to testify and be cross-examined

Evidentiary standards still exist. One can't just submit a random photo/video as evidence. At a minimum, the source of the video will have to submit an affidavit attesting its authenticity and when/where they were when they filmed it

Footage from established media outlets are usually exempted
