And if you keep going back year after year, the guy making pizza in his basement becomes a professional pizza chef and the girl making delicious açaí bowls in her garage opens a bowl and smoothie restaurant.

It’s part of the fun.

…My favorite is when you pull up to somebody’s house or a mosque parking lot at 12:15am and the nicest young person you’ve ever met serves you homemade pizza, brisket tacos you will be thinking about for years, oreo pudding you eat so quickly you shock yourself, etc etc.

I cannot overstate how excited I am for it. It’s a joy every year.

There’s a wide range of cuisines and levels of polish. Some are specials and late hours at restaurants. Some are tents or festivals….
