It's as follows: Knead 100g lievito madre (ie Italian sourdough starter). 400g flour, 2 tsp salt, 1 tbsp honey, 25g extra virgin olive oil. Leave for 4 hours. Cut into 8 balls. Shape into bagels. Leave for 3 hours. Boil each bagel for 30-40 seconds per side. Cook at 230°C static for 25 minutes.
