I took what were basically 6, 7, 9, and 10 for my undergraduate major, although they were described much more prosaically in the course catalog. And your assessment is spot on. Once you get past the freshman drudgery classes, math is actually stunningly beautiful.

The 2010s will be remembered as the golden age of delicious affordable dark chocolate. The good stuff will turn into a luxury product. Artisan bean-to-bar producers will find it even harder to compete.

I’ve noticed three trends:

1-mega food corporations backpedaling on or even (like Nestlé) pulling out of sustainability agreements
2-majors funding alternatives such as lab-grown cocoa
3-lowering cocoa percentage by launching more milk and white chocolate products and mix-ins.

They’re giving up.
