Only guy I knew in high school who pursued and got a tenured professorship is at a SUNY community college in the Southern Tier and he's PSYCHED. I'm sure he'd love to live and teach somewhere else but he's honest about how hard that would be and how lucky he got.

Did you ever nail your roast potatoes recipe? I've been using ghee.

I mean turning a playpen upside down over a child has a safety use too. But something about these things speaks to the parents' point of view on nature of the relationship & that's not the view I took with my 3.

Seriously. My parents (born during the war not the boom) loved me very much but "go in the basement and find something to do" included all the tools and chemicals and there were definitely days I was luckier than smart.

Yeah coming of age while boomers were in their "fuck them kids" era was wild. 90% of children's non-toy products and stuff seemed to involve physical restraints. Children leashed like dogs and suchlike.

My dad is 84 and had a secretary until he was in his mid 50s so anything he knows about computers is since 1990 and he's ok at it but I drive down to New York once a month minimum to troubleshoot with him.
He'd still beat me in a foot race or one on one at basketball tho.

Absolutely unironically for city dwellers and lovers it is truly an age of wonders. The reversal or long trends in New York boggles and I am delighted you feel it in Detroit too.

Also if you haven't seen the jelly cakes? go look at jelly cakes. jelly cakes are an absolute fascination to me and I want to find a latin american bakery by me that does them and just ask about them. jelly cake unmoldings are wild.

how Bertie could have had such a repertoire of dishes-people were crazy for them for a time!- and what made them fashionable. Convenience, the shock of the new but also...these were a luxury item for just about ever and now it's affordable? of course people lost their minds a little. good for them.)

over the next five years or so, not as a hobby or even a tiny avocation, i just paid attention when i read about aspics or jellies, even if the tone was a little "get a load of this!" which let's be fair, is an understandable reaction. after a while i think i got enough to understand...

all jellies and molds. Our host, Uncle Racine, had had a stroke and never fully recovered the ability to swallow, and gelatins were one way Aunt Bertie could make things that it would be less humiliating for him to eat publicly. But I was interested in how many different things she made that way!

(just as an add-on... a lot of why i learned about this at all was that my better-than-I-deserved then-girlfriend, now better-than-I-deserve wife, went on a road trip down the east coast and spent an afternoon in Newark Delaware with her aunt and uncle. they served us lunch and it was nearly...

at any rate i cook a lot and i am pretty good at it. i know from the effort it takes to get anything at all on a plate looking decent that nobody ever cooks something as complicated as a gelatin mold for another person out of spite.

i honor and respect that intention and effort.

wanting a fancy thing even if it's not the right fancy thing is pretty common. but there's a little disconnect when we lose the memory of that original object of devotion- a gorgeous belted galloway, or an expertly prepared veal-bone aspic of fish- and just see the imitation, stripped of finery.
December 11, 2025 at 7:10 PM
i guess i could be mad that people can't help but to want to "better" themselves by serving aspic and making dogs stand weird because rich people do fancy versions of those things. but they are after all doing exactly what's expected of them. and doing a very human thing!

but put the engravings of champion bulls and horses next to those of showdogs and you'll see how we screwed them up, individually and as breeds within the species, applying bourgeois cattle metrics to their poor doggy selves.
