I got influenced by @jonkung.bsky.social to try this Chinese condiment, and I'm so glad. It's not the same brand he talked about in his video, but it's delicious nonetheless. Intensely umami, salty, and complex. And no, it doesn't taste like olives. At all. It's closer to dried shrimp, actually.

It’s not impossible to find. I wrote this book in southeast Michigan and that’s where I found all my ingredients.

Amazon has some and there’s a grocery app called “Weee!” That specializes in Asian and Mexican ingredients.
