Definitely not apocryphal. There is a pretty robust body of work in food microbiology on a variety of Italian cheeses; the wood shelves often have non-pathogenic bacteria that block the growth of pathogens like Listeria in much the same way our own microbiome protects us from infection.

I think there's a little "show, don't tell" element there too. Americans have been stuck in a very right wing paradigm for a long time, so we need to show that left policies work for everyone and mayoral candidates (esp in big cities) are the best way to do that.
