Food pics! We had delicious black bean & corn tacos on Thursday and then shepherds pie and a blueberry ricotta crumble cake yesterday (Friday). My wife made the pie yesterday and I made the cake. The cake was made with frozen Maine blueberries and homemade ricotta. It's been a very yummy weekend! 😋

It's always cold in my office at work, so today I brought wool socks to wear with my pair of stay-at-work shoes. This is the first pair of socks I knitted, probably in 2007. They still make me ridiculously happy. 😻 #knitting #socks

I posted a pic of this baby blanket that I'm working on almost a month ago, and there has definitely been progress made!! I'm knitting today while bread dough is rising. Anything to avoid doomscrolling (and going outside, because Minnesota is obscenely hot today).

One of my favorite things to do on the weekends is cook lemon ricotta pancakes. These don't look perfect, but they sure are yummy! 🥞

This isn't something I cooked, but my wife did. She baked the buns from scratch and worked some kind of magic to make an amazing sauce to go on the fried chicken. The only ingredient I know for sure in the sauce is gochujang. 😋

Yesterday, just for fun, I baked a single-layer vanilla cake with vanilla buttercream from scratch. It was easy and delicious! Next time I might double the cake recipe and put a layer of strawberry jam between the cakes.

This will eventually be a blanket for my nephew. I started it almost a year ago, but have not been knitting as much as I would like. I'll post progress pics here occasionally to keep me accountable. 😊

Last weekend I made strawberry jam for the first time in years. It's already gone, so there's a good chance I'll make more this weekend, especially if I can find berries at the farmer's market.

Tip: I used lime juice instead of lemon, and it's a game changer! So tasty.
