Bonus points if you have your roasting/sheet pan in the oven to get hot as the oven cranks up. Instant caramelization and a lovely sizzle when the oiled veggies hit the pan.

I feel my life would be very different if somebody had introduced me to roasted veggies before I turned 40.

This method goes for broccoli, carrots, cauliflower, Brussels sprouts, artichoke hearts, large-dice eggplant & potatoes, etc etc etc

Listen: generously oil your vegetables. Season generously with whatever you like. Roast them at 400° for at least 30 minutes. I am serious, blast them. You want them soft & caramelized. It’s ok if they burn a little bit.
