Kitchen is a disaster but I have the pork! But now I’m worried this isn’t enough. But I have tons of chile colorado sauce for the tamales de rajas con queso (I put some in the masa - keep it veggie but adds flavor)

Tamale prep day 1 (or day 2 if you count the day in September I roasted all those hatch Chiles) - tomorrow is assembly, so the chile colorado and the pork need to get done tonight. As always, this is 60% vibes, 40% vague recipe from elder relatives

Always think of my grandfather on Veterans Day - someone who actually Gained weight in basic training bc was first time he had regular high calorie meals. Also him and my 2 brothers who served/serve look so much alike.
