Tonight’s dinner: Turkey soup with tomatoes, green chilies, black beans, and avocado, with a grilled cheese.

Tonight’s dinner: Turkey soup with tomatoes, green chilies, black beans, and avocado, with a grilled cheese.
It’s not quite all-day sauce; it took about 3 hours, but it’s delicious. I used 2.5 lbs of turkey sausage, bell peppers, onion, mushrooms, and 70 oz of crushed tomatoes.

Thanksgiving dinner for two, because we wanted to make a turkey. We may have overdid it with the whole meal.

This turkey is done but I’m nowhere near ready to rest it yet so it’s going back in the oven on low heat with some foil. The gravy needs to simmer for a bit but it’s nearly done. Still need to make some side dishes.
