Baked chicken spiked with fresh thyme & tapenade with fresh parsley & basil.
The freezing weather is driving my cooking instincts since I'm stuck inside. Good thing I've got some fresh herbs to work with! LOL

So, I used part of the marinara to make lasagne. I added Italian turkey sausage to the rest for spaghetti sauce. A lot of this stuff will go into the freezer for future easy meals.

I'm making marinara sauce today with fresh homegrown, organic oregano & basil. Tastes good, so far. Glad I brought the herb plants inside to over-winter! :-)

After a weekend of ice, snow, highs in the teens & lows of 0°F, we got nearly 6" of snow yesterday & overnight. At least it got up to 30°F today. Blech!

The IOF intensely bombed Rafah last night, killing at least 67 people. It turns out the bombing was cover for an operation in Rafah that rescued two Israeli hostages. 67 men, women and children dead for two Israelis who could’ve been saved four months ago with a prisoner swap.

I talked tonight with my older son (adult) about the need to establish common ground about basic human rights with people who have differing political beliefs. We HAVE TO make an effort to raise people's consciousness about WHO our enemy is: the oligarchy! Not each other!
