To explain, accelerating usually gets you up to 100% speed. But using drift boosts and trick jumps can give you temporary extra speed called "reserves".

The trick is to keep maintaining and gradually increasing the extra speed. Bumping into a wall decreases it, while braking puts you back at 100%.
