Didn't have quite the precise ingredient proportions, but made a suitable version of Southern Thai Turmeric Chicken Soup. 🍽️🍜🇹🇭🌶️

Found fresh catfish and thought I would fry it up. Marinated in buttermilk & Louisiana hot sauce.

Coating was yellow cornmeal/flour & spices.

Pretty large filets so had to get out the 12" cast iron. Tough to get the temperature right this try. But sure was tasty. 🍽️🍜🌶️

Fish sauce wings! With beer.

Made from this HTK recipe. I used the shallow frying method which is the standard, though she gives instructions/notes for deep frying & air frying methods as well. 🍽️🍜

Brown butter/EVOO sauteed "sea bass" with S&P and lemon juice.

With yellow and green squash sauteed in olive oil, scented with shallots & garlic and seasoned with S&P and dried Greek oregano. 🍽️🍜
In a white bowl at the bottom 8:00 position or two pieces of sauteed fish and the rest of the bowl is covered with sauteed yellow squash and zucchini.

I fell back into some breakfast tacos. 🌮🌮 😄

Chorizo, eggs, onions and cilantro with a wedge of lime and Mexican style guacamole. Which is pretty much just smashed avocado with salt and lime juice. 🍽️🍜🌶️🇮🇹

A cool, drizzly start to Nov 1. So I heated up some leftover vegetable soup & topped it with a little olive oil and feta cheese. And made a turkey and provolone sandwich to go along with it. 🍽️🍜

Cooked up a vegetable soup tonight. Tomato and chicken stock broth based on a recipe from Allrecipes.

In a Dutch oven is chicken stock, water, fire roasted tomatoes, tomato vegetable juice, better than bullion chicken stock, diced white potatoes, sliced carrots, sliced green beans, diced zucchini, frozen peas and corn. Initial stage when cooking the base liquid smashed garlic cloves, a bay leaf and Italian parsley leaves and stems were added. Then tomato paste and Greek oregano. Salt and pepper as needed.

Oven baked baby back ribs with corn on the cob, pickles and BBQ sauce on the side.

Ribs brined in water, salt & brown sugar, dried and coated with Rendezvous, seasoning and wrapped in foil and cooked in the oven at 275 for 2 and 1/2 hours.

First time making a frittata. It was puffy in spots around the edge and was sticking to the bottom of the skillet. Time to re-season it.

It was still tasty though. 🍽️🍜

Boneless/ skinless chicken thighs lightly marinated in soy, ginger and garlic then cooked on a grill pan. With sauteed mushrooms (base recipe in alt text) and sliced kumato tomatoes. Chicken and mushrooms garnished with chopped Italian parsley.

Khao Pad Gai. Rice (Khao) stir fried (Pad)with chicken (Gai).

Had a half pound ground beef patty in the freezer so I pulled it out to make a bunless Hatch green chili cheeseburger.

While pan frying the patty I put in a few splashes of Worcestershire sauce for a little extra flavor.

While out for lunch in Odessa, TX, I drove 1.5 miles from the nursing home where my brother lives to see the Stonehenge Replica at the UT Permian Basin campus. Just past stores, restaurants, etc and there it is.

Created in 2004 by members of the Art Department.

Sol dinner in Odessa at Mamacita's Mexican grill. I had spicy green chicken enchiladas and a margarita on the rocks. They make their own enchilada sauces and this was really to my liking. 🍜🌶️🇲🇽🔥

Lunch in Odessa, TX with my older brother who is in a nursing home there. At a Asian fusion place called Volcano.

I had Singapore Mei Fun noodles and I ordered some sushi for him which he barely ate as he spent more time looking at all the people. 🍜🌶️

So I bought HEB deli ravioli with buffalo mozzarella, balsamic vinegar, and pecorino romano. Product of Italy.

Not too bad for an inexpensive pre-made product. 🍜🇮🇹
