Sub light cream for the coconut milk. It needs a creamy element to bring it up a teensy bit (regular milk is too thin). And cream is more readily available.

My road to Learning To Love The Legume™️ started with green lentils, and I have even made chili with them (they’re versatile and relatively cheap), so the faux mulligatawny (aside from the coconut milk) is pretty economical too.

Lentils, slow cooked in chicken broth, and then blended until smooth. Add a can of chicken breast (cooked), some curry powder, and if you can swing some coconut milk: faux “mulligatawny”!
