JFR Coates' has a gryphon dragon trans lesbian polycule fantasy romance book. And Vyria Durav's The Dragon and Her Princess is very similar tonally, though again, only if you want romance in there =]

My epic fantasy series has a lot of queer characters, but it doesn't start with transitioned trans characters, though a main cast character transitions in books four and finds himself in book five and seven. Then book eight's main PoVs include a transfemme character (plus a bonus enby).

While Dire by John Bailey isn't super queer, the anthology where other gryphon authors wrote in Bailey's world includes quite a few trans characters. Coldbright (short novel) and then Saylor Ferguson's triptych of lesbian stories in particular.
