Tried my hand art pork shiitake mushrooms again from the Izakaya cookbook, this time finding unseasoned ground pork.
These turned out so much better cause I seasoned them with more shoyu and sake, and plain pork being necessary (obviously). I prefer the ginger on it still.

Weekend project: Tonkotsu Ramen

A 3 day labor of love….

Yesterday I soaked 3kgs of pork bones (mostly neck bones) in water overnight.

Now I’ve start the 12 hour rolling boil to prepare the broth…

YUM. Found some Tocino Flavoured Spam in our local grocery store. Fried some in some black sesame oil along with some chopped cabbage for filling in this morning's onigirazu experiment. Was also more careful about ratio of rice to filling this time. Delicious! #JapaneseCooking #Onigirazu

A friend generously gave me some shiso leaves from her balcony garden. This morning I made onigiri with rice mixed with furikake & torn up shiso, a bit of pickled plum in the center, wrapped in nori. YUMMMM. Now I want to grow my own shiso!

Made onigirazu (a sort of rice sandwich, variant of onigiri) for lunch! Filling: cooked pork / mirin / soy sauce / grated garlic / grated ginger, chopped green onion. Going to try other fillings next time. #onigirazu #JapaneseCooking

Here's how I've packaged up the norimaki I've made for me and my dad's lunch today. To keep the nori (seaweed wrapping) from getting soggy, I'm keeping that separate and adding just before serving.

My newest #onigiri adventure: musubi-inspired Spam onigiri via Jecca Chantilly's recipe (jeccachantilly.com/spam-onigiri/). Fry chopped Spam, add sauce (sugar, soy sauce, mirin , sesame oil), reduce, add chopped scallions, form onigiri, coat edges in furikake, wrap w/nori. YUM.
