1️⃣2️⃣ Tofu Holiday Roast
Bean Thread Number 12: Tofu Holiday Roast (1/3) Ingredients: 14 oz extra-firm tofu 1 orange, sliced 20 whole cloves For the marinade: 1/4 cup olive oil 1/4 cup low-sodium soy sauce 1/4 cup brown sugar 1 1/2 tbsp liquid smoke 1 tsp yellow mustard 1 tsp paprika 3 cloves garlic, minced 2 tsp onion powder 1 tsp black pepper For the glaze: 1.5 tbsp whiskey 1/4 tsp orange zest 1/2 cup orange juice 11/2 tbsp dark brown sugar 2 tbsp cranberry sauce (smooth) 1/4 tsp salt 1 tsp paprika 1/3 tsp black pepper optional add-ins: 1/4 tsp red chili flakes, 1/4 tsp ground ginger Bean Thread Number 12: Tofu Holiday Roast (2/3) Directions: 1. Most people press their tofu to get the excess moisture out, but for this recipe I recommend freezing the tofu and then thawing it out the day before you want to prepare. Really makes the marinade stick! (If you're pressing, make sure to do it on each side for 15 minutes beneath a heavy pan. You want the surface to feel as dry as possible.) 2. Whisk the marinade together. Set the tofu in the smallest dish that it fits in with room around the sides. Pour the marinade over your tofu block and cover it. Marinate for 24 hours, flipping over the tofu about halfway through. If you can do so more frequently, even better. Each time, spoon some of the marinade from the sides over the top. The goal is to get as much into the tofu as possible. 3. When the tofu has marinated and is ready to bake, preheat the oven to 375° F and line a small baking dish (9x13 or smaller) with parchment paper. Line the orange slices on the bottom and place the marinated tofu Bean Thread Number 12: Tofu Holiday Roast (3/3) block on top of them. Take a small, sharp knife and score the top of the tofu in diamonds. Place whole cloves, round side up, in between the lines. 4. Bake for 60 minutes, checking the tofu occasionally. Take it out sooner if the edges are getting too dark. 5. While the tofu is baking, add all of the glaze ingredients to a saucepan and stir to combine them. Bring to a boil, then lower to a simmer. Simmer for about 25-30 minutes, or until reduced by about half and thickened. (You can also prepare this glaze while the tofu is marinating and refrigerate until needed. It will be quite sticky, but it'll save time and kitchen space!) 6. Take the tofu out and pour the glaze all over top. Return it to the oven and bake for 10-15 minutes, until the glaze is thickened onto the tofu roast and just starting to darken at the edges. Keep checking it until it looks like it's about to start burning. That's when it's done! 7. Let your tofu roast rest for about 15 minutes. Remove the cloves and burnt oranges before serving.
