Full writeup ahead, but I'm all in on the Nightmare Alley B&W cut. It feels like the film this was meant to be. Along with new scenes, Del Toro discusses how moments "breathe" more in ways that feel natural to B&W. With the package/layout, it's also positioned as THE version to watch moving forward.

Lotus cars boss Colin Chapman's head of PR once told me of how they finagled their new Elan to be Emma Peel's car in 'The Avengers', and how the sales graph soared 'every time her bum touched the drivers seat'. I wonder how much Lime Juice Raymond Chandler sold for Rose's of Leith (now Schweppes)?
"The Long Goodbye" gimlet refers to a cocktail famously described in Raymond Chandler's 1953 novel as being "half gin and half Rose's lime juice and nothing else". This iconic, simple recipe is a straightforward mix of gin and Rose's Lime Juice, with some variations suggesting a 2:1 ratio of gin to lime juice for a less sweet version. 
The classic "Long Goodbye" gimlet
Ingredients:
1.5 oz gin
1.5 oz Rose's Lime Juice
Instructions:
Combine the gin and Rose's Lime Juice in a mixing glass filled with ice. 
Stir well until chilled.
Strain into a chilled cocktail glass.
