Part of it is that people in the USA just don't know how to cook it, but I guarantee at least a little bit of it is identity-signalling: tofu is woke soy fake food opposed to real manly beef. Same reason there's always that weird hysteria about being forced to secretly eat bugs.

Standards are at rock bottom now because the student is the customer now and profs are service providers.
God, like...the incredibly simple sentences make the essay feel as if it were written by a middle school kid.
Like how is this college level writing? I don't feel like this would have been acceptable in my 10th grade english classes.
