Fasolakia (Greek greenbean soup)
- Add olive oil, garlic to taste, and 1 red onions in a pot on high heat.
- Lower to low/med and add crushed tomatoes, cut potatoes, carrots, seasoning. Add water if needed.
- Simmer 20 min.
- Add green beans 1-2 lbs. Simmer 20 min.
Taste and finish!
