Your last statement is incorrect. For example, trees share nutrients through a network of roots/fungus and will even keep a dying tree alive through it. This happens in old growth forests. They have also been shown to share information to help others stay away from disease.

First, yes they don’t have a central nervous system but “sentient” is up for debate. Plus what you’re saying is you won’t eat them basically cause you think they think. Plants and especially trees have been proven to think.
