If I can make it any clearer:
This video I took back in 2019 shows a live demonstration of a similarly advertised computer vision system.
In this demo you can see how people's movements are traced, their ages (poorly) estimated, and unknown 'visitors' are logged with an automatically assigned ID.

...and let me tell you, this instant replay system is pretty terrifying, but it's just the tip of the iceberg.
I don't think most people understand that your ENTIRE BODY is being tracked and analysed: including you journey around the store, what you pickup and hold, and even where you're looking!!
