I was using "queso tetilla" to stuff the thing.

Queso tetilla is a typical cheese from Galicia, 100% cow milk, soft, creamy, sour, salty, pretty perf when using it on sandwiches or pizzas, it melts easily, but kind of lacking on flavor when hot.

Libritos are pork loin fillets stuffed with cheese and ham, then folded and breaded and fried.
Pretty yummers bc u can use whatever cheese you prefer, and season the meat with mustard and so on.

Classic childhood dish.
