I know a couple of the artisan burger slingers in Newcastle, and have been told they're only allowed to serve rare burgers if the meat is minced in-house, on the same day.
Seems sensible, and I've never had food poisoning 😃

I've had rare Bellota in Sevilla and it's delicious. I wouldn't cook most of the pork you get in the UK that rare though. It's mostly pale and fairly insipid, and needs a bit of char.

I had one pretty much thrust on me at the Unite rally. When I met my daughter and her friends for a beer afterwards, they were horrified. It's not just boomers with the visceral response.

I lived in Fenham for a while in the mid 80s, and even then it was home to a myriad of Indian, Pakistani, Bangladeshi etc families and shops. And the Toon has only got more multicultural in the 40 odd years since. It's great!

I'm guessing you used beef stock by the colour? That is traditional, but I had some chicken scraps lying around, and got a lovely golden stock from those. Different, but just as good.
