Already AI could write Shakespeare's 155th sonnet, Wordsworth’s Upon Forth Bridge and TS Eliot’s Five Quintets.

But I think people will always write poetry because they need to. Original poems might circulate hand to hand or rather screen to screen, like Samizdat.
