this shook loose a memory from, like, middle school 25 years ago, where dude on the morning announcements did a how-to bit and there was a classroom-wide incredulous "MAYONNAISE???" at 8:45 in the morning
I tried the "mayo instead of butter" thing for grilled cheese. I was not a fan. Part of what makes a grilled cheese work for me is the taste of browned butter in the bread. You don't get that with mayo (or to be fair, any other fat). I didn't HATE it. It's just not what I want in a grilled cheese.
You can, however, use it for grilled cheese... instead of buttering the bread.
