On my phone, this setting was under each email address in Settings, not under "General".
If you use GMail, AI (Gemini) was turned on yesterday by default and now scans all of your content for machine learning. To turn off, go to Settings>General and scroll down. Uncheck the box for "Smart features."
There's other "Smart" add-ons as well, but that's the one that reads your content.

I think it’s a little weird that a guy who blows up Venezuelan boats because they just look like they might have drugs, sends armed forces against his own cities, and threatens violence against Hamas thinks he deserves the Nobel Peace Prize. He knows it’s not the Piece Prize, right?
